In a small saucepan, heat beer over medium-high heat until it bubbles. Stir in flour and cheese. Whisk until cheese has melted and is smooth. Whisk in dry mustard, garlic powder, paprika, salt and pepper. Remove from heat.
To thicken the sauce, add a flour a little bit at a time. For a thinner sauce, add small amounts of beer until it reaches the desired consistency.

Use a Pale Ale or Light beer for a subtle beer flavor.
Use a Darker Beer or Hoppy IPA for bold flavors.
I use Truck Stop Honey Brown Ale.
Can substitute dijon mustard for dry mustard in the sauce.
Substitute cayenne pepper for paprika to give the dip a little kick.
Use gluten-free beer and cornstarch for a gluten-free dip!
I used sharp cheddar cheese. This would also be good with some smoked gouda, pepper jack, white cheddar, or a nutty gruyère.
Expert tip: grate a block of cheese with a box grater for this recipe. I find that freshly grated cheese melts better than pre-shredded cheese from the bag.
Keep the dip warm in a small slow cooker for parties.
Does Beer Cheese Sauce have alcohol in it? Yes. The recipe does use actual beer. Feel free to use a non-alcoholic beer if you want an alcohol-free dip.
Store leftovers in an airtight container. Reheat in a crockpot on low or in the microwave.
